This broth mix has an amazing flavor. It can be used to make soups, sauces, dips, and salad dressings, or season rice, vegetables, and proteins like fish, shrimp, chicken, and pork.
INGREDIENTS
- KNORR GRANULATED CHICKEN BOUILLON
- CELERY JUICE POWDER
- SPINACH POWDER
- SIMPLY ORGANIC ONION POWDER
- GROUND CELERY SEED
- GROUND BLACK PEPPER
And just because I use specific brands, doesn’t mean you have to. Feel free to try other brands. I’m only sharing the ingredients I use. I am not being paid to endorse anything.
This broth mix can also be made vegan by replacing the chicken bouillon with a vegan bouillon of your choice.
SINGLE SERVING
This recipe makes makes 1 tablespoon of broth mix, which when combined with 2 cups of hot water and a brick of instant noodles, will create an extremely tasty bowl of noodle soup.
- 2 teaspoons Knorr Granulated Chicken Bouillon
- 3/8 teaspoon Celery Juice Powder
- 1/4 teaspoon Spinach Powder
- 1/8 teaspoon + 1/16 teaspoon Simply Organic Onion Powder
- 1/8 teaspoon Ground Celery Seed
- 1/16 teaspoon Ground Black Pepper

And yes, the measurements do seem tiny. I spent years fine tuning this recipe so that it uses just enough of each individual ingredient, but not too much, to create a wonderfully strong flavor. This was done to conserve ingredients and to stretch that dollar.
SMALL MEASURING SPOONS
I’ll admit I didn’t have a 1/16 teaspoon when I began experimenting with broth mixes. I had to go looking and found the cutest set of small measuring spoons online. It has an 1/8, a 1/16, and a 1/32 teaspoon, also known as a “dash”, “pinch”, and “smidgeon”. They have been very helpful.
BIG BATCH
The following recipe makes 3 cups of broth mix, which is enough for 48 bowls of noodle soup. The recipe can be easily cut in half, if you want to make less.
- 2 cups Knorr Granulated Chicken Bouillon
- 1/4 cup + 2 tablespoons Celery Juice Powder
- 1/4 cup Spinach Powder
- 3 tablespoons Simply Organic Onion Powder
- 2 tablespoons Ground Celery Seed
- 1 tablespoon Ground Black Pepper
To mix this big batch, I run it through my 7-cup food processor to make sure the ingredients are all thoroughly combined. To prevent clumping, store the broth mix in an airtight container. Depending on the climate (ie. humidity), adding a little rice flour to the batch may also help prevent clumping. Sometimes ingredients may settle out of the mix, so it’s a good idea to give the container a good shake before scooping out a serving.
